Our Burgndy Hautes-Côtes de Beaune pairs perfectly with dishes such as jambon persillé (parsleyed ham) or grilled meats.
It also pairs well with game, such as pheasant or venison. Our Burgundy Hautes-Côtes de Beaune is a wonderful match for fruit-based sauces or spicy sauces.
This wine also goes beautifully with soft cheeses or those with a bloomy rind, such as Brie or Camembert.
The terroir of our Hautes-Côtes de Beaune consists of shallow, clay-limestone soils that are well-draining and not very fertile, warming and drying quickly. The vines of the Hautes-Côtes-de-Beaune appellation grow at the foot of cliffs on sunny hillsides perpendicular to the Côte de Beaune. Officially recognized in 1961, the appellation stands out for its south-southeast exposure, with an altitude ranging from 290m to 485m, making it slightly higher than the rest of the Côte. The soil and subsoil are particularly composed of limestone and marl from the Jurassic period.
